The Heart & Soul of Mediterranean Cheese: A Journey Through Our Selection

You know that feeling when you walk into your grandmother’s kitchen and the smell of fresh cheese just wraps around you like a warm hug? That’s exactly what we try to capture here at Italo Food. Oh, and by the way – I’m Maria, and I’ve been part of this wonderful cheese journey since we opened our doors in 1991.

Let me take you through some of our favorites…

Southern Albanian Treasures
There’s something really special about our sheep’s milk cheese from Southern Albania. Maybe it’s because every bite tells a story of misty mountain mornings and generations of cheese-making wisdom. The shepherds still use the same methods their grandparents taught them, and well… you can taste that dedication in every crumbly, slightly tangy piece.

A Little Piece of Italy
Then there’s our burrata – oh my goodness, the burrata! I still remember the first time I watched a chef cut into one of these creamy wonders. The way the stracciatella heart slowly spills out… it’s like poetry on a plate. We bring these fresh from Italy’s finest dairies, and I think they’re just about as close to heaven as cheese can get.

The Kaçkavall Collection
Now, let me tell you about something I’m particularly proud of – our Kaçkavall variations. We’ve taken this beloved cheese and created something really unique. There’s our spicy version with red peppers (perfect for adding a kick to pizzas), the olive-studded one (amazing on antipasti boards), and my personal favorite, the herb-infused variety that just melts beautifully on warm bread.

I’ve spent countless hours talking with chefs and restaurant owners, and I understand their needs – consistent quality, reliable delivery, and products that perform perfectly in professional kitchens. That’s why we offer our cheeses in various formats, from small artisanal pieces to professional-size blocks.

A Little Tip…
You know what? If you’re working with our burrata (or any fresh cheese, really), try taking it out of the fridge about 30 minutes before serving. It’s amazing how the flavors open up when they’re at room temperature. Just a little secret I’ve picked up over the years…
