5:30 AM: Our first delivery arrives – fresh burrata from Italy. The temperature has to be just right, and yes, we check every single piece.
7:00 AM: The phones start ringing – pizzeria owners ordering their daily mozzarella, chefs checking on their specialty cheese orders. Sometimes they just call to chat about new menu ideas (I love those conversations!).
9:00 AM: Quality control time. We taste, we test, we make sure everything is perfect. Someone has to do it, right? 😊
