There’s something almost magical about walking into our aging room. The gentle hum of temperature-controlled air, the rows of carefully tended cheese wheels, each developing its own personality over time…

Our specialty Kaçkavall collection is kind of like a family – each member unique but connected by tradition. Take our spicy variant, for example. We age it just long enough to develop a rich, complex flavor, then the heat from the peppers adds this wonderful warmth that builds slowly with each bite.

Then there’s our olive-studded Kaçkavall – oh my goodness, this one’s special! We carefully fold in selected olives during the making process, creating these beautiful pockets of Mediterranean flavor throughout the cheese.

The herb-infused variety? That was actually inspired by a conversation with a local chef who wondered what would happen if we combined traditional Kaçkavall with fresh mountain herbs. The result was… well, why don’t you try it and tell me what you think?
